Waiting for Victory and Thanksgiving leftovers

I’m hyped up for the Georgia Tech @ Georgia game tonight and doing lots of post holiday cooking.

So.  What to do with the leftovers?

My super awesome guy is the owner of a super awesome Big Green Egg.  He used it to smoke not one, but TWO turkeys because that’s how we roll.

I make bang up chicken salad.  And that recipe makes bang up turkey salad.

You need…

Turkey leftovers chopped up fine

Walnuts/pecans/almonds or a mixture of the three

One or two apples cored and chopped

grapes halved or quartered

DUKE’s mayo.  Now, look.  My grandfather drove a truck for Kraft Foods for 38 years.  I grew up on Kraft mayo.  But, any good Southern cook will let you know that if you ain’t makin’ it yourself, you’ve got to use Duke’s. Period.

Cheese (this time I used bleu, but parm, romano or white sharp cheddar work well, too.)

Celery chopped

Celery seed

Couple pinches of salt

Couple grinds of pepper

Couple shakes of tarragon (if you have it)

Craisins/raisins/dried cherries/dried pomegranate whichever is fine or all of them

Mix it all together.  Chill at least a couple of hours because that’s what IS really the ish.  It gets all good and mixed and melded and teh yum.

It will look like this…

And it will taste teh yum.

Throw all the bones and stuff in some water with celery, carrots and boil forever.  Strain and you’ve got awesome poultry stock!
